Spicy Peanut and Tomato Soup Recipe

Peanuts and tomatoes don’t seem like food that would cheerfully coincide. Yet, they do.

Furthermore, in this dish, they meet up to make a generous and smooth soup that will fulfill you with the least quarrel.

Truth be told, one of the delights of this soup is that it very well may be made in under 30 minutes with fixings that are presumably in your storeroom.

Ingredients:

  • 1 tablespoon olive oil
  • 1 huge red onion, diced
  • 2 huge carrots, diced
  • 1 celery stem, diced
  • 1/2 teaspoon legitimate salt
  • 1/2 teaspoon newly ground dark pepper
  • 1 can diced tomatoes, 14.4 oz
  • 5 cups chicken or vegetable stock
  • 2 tablespoons smooth or thick peanut butter
  • 1 1/2 teaspoons hot smoked paprika
  • 1 teaspoon cayenne

Directions

Saute onion, carrots, and celery together in a medium pan over medium-low intensity.
Season with salt and pepper. Cook until delicate, around 5-8 minutes.
Add tomatoes (counting juice) to the skillet. Add peanut butter and stock. Mix until smooth.
Add paprika and cayenne and cook over low intensity for 20 minutes.
